Voodoo GF Provisions: Our Phase One Plan
Dedicated gluten-free Southern food made for people who refuse to settle for “good enough for gluten-free.”
Voodoo GF Provisions is building a dedicated gluten-free specialty food market in Johnson City, Tennessee, with exceptional house-made baked goods at its heart. The goal is to make satisfying gluten-free food easier to find, buy, and enjoy—and to create room for qualified local and regional producers to grow.
Planning status: Our current first-location plan is built around a proposed Elm Street site. A lease, possession, regulatory approvals, site conditions, and buildout must be confirmed before an opening date or final menu is set. This page describes our direction, not a guaranteed schedule or complete opening menu.
Phase One: A gluten-free specialty market with standout baked goods
We are planning a focused opening model rather than a full-line traditional bakery with a large case of breads, cakes, and pastries on day one. The first phase brings together three complementary parts:
1. Voodoo-made foods
Our planned house-made assortment draws on products and recipes we know well: gluten-free biscuits and cinnamon rolls, brownies, selected cookies, cheesecake, cornbread, frozen take-and-bake items, dry mixes, and seasonings. The final opening assortment will focus on items that can be produced consistently, commercially validated, properly costed, and labeled. Not every product listed here is a launch commitment.
2. A curated gluten-free market
The shop will offer a thoughtful selection of gluten-free groceries, pantry ingredients, specialty foods, and products from qualified outside producers. Local and regional makers are part of the model from the beginning; the marketplace is not a fallback for products Voodoo does not make.
3. Room for qualified producers
Where permits, facility design, and operating capacity allow, we plan to make commercial kitchen access available to qualified gluten-free producers. Participating producers may also be considered for marketplace sales under separate arrangements. Safe operations will depend on clear approval, sanitation, allergen, and cross-contact controls.
Why this opening model
Gluten-free customers need more than ingredients and occasional treats. We want to offer trusted specialty foods alongside Southern favorites that feel generous, familiar, and convenient. Starting with a focused assortment lets us build reliable production and learn from real customer demand before taking on a broader menu.
A successful specialty market with excellent house-made baked goods is a complete first-phase business. Becoming a larger, more traditional bakery or adding hot-food service is an opportunity for later—not a condition of success.
