Voodoo GF Provisions History

Let me share with you how Voodoo GF Provisions came to be.

In the spring of 2022 I was looking to open a restaurant. I wanted to serve Nashville Hot style Fried Chicken along with collard greens, pinto beans, banana pudding and the like. I hadn't thought of a name, just what I wanted to serve. A friend suggested I listen to one of my favorite artists records, Southern Culture on the Skids Dirt Track Date, since it has a lot of references to southern culture. The first track is Voodoo Cadillac. I immediately knew that I was going to name the restaurant Voodoo Chicken. When I went to grab a gmail account Voodoo Chicken was already taken so I added the JC (for Johnson City). Voodoo Chicken JC was born.

After opening in May of 2022 I continued to evolve the menu adding more southern inspired dishes. I also had a few customers asking if I could include some gluten free items. This created a challenge for me. So, I swapped out regular flour for rice flour and it worked. Once I made that change, I started seeing if I could change other items on the menu. I made a change to our fried pickle dredge, changed soy sauce to Tamari sauce, changed our waffle batter recipe, added a gluten free biscuit, added gluten free cinnamon rolls, gluten free brownies, started making a gluten free slider roll and even, for a short time, was making gluten free cheesecakes.

It was very rewarding getting to make a difference in so many people's lives. 

Forward to April 2025 and my business partners and I had a difference of opinion on the operations at the restaurant, so I walked.

Many people asked if they could purchase my products. I even have a company wanting to license my breading recipe. So here we are. I am packaging my mixes for sale, while trying to build a GF food truck. I have so many people rooting me on, it's amazing!

Going forward I will try to keep you up to date on the progress of the GF food truck, new product updates and recipes to use with the various mixes I have for sale.
