Recipe Ideas #1 cookies and pizza!

I included a Choclate Chip Cookie Mix in my product lineup but you can make them at home using the 1:1 GF Flour Blend.

1 1/2 Sticks butter
3/4 C Brown Sugar
1/2 C Sugar
2 eggs
2 tsp Vanilla extract
2 1/2 C  Voodoo GF Provisions 1:1 GF Flour Blend
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1 1/2 C Chocolate chips

 

preheat oven to 375

In a mixing bowl cream butter and both sugars until light

Add eggs, one at a time until fully incorporated

add vanilla extract

In a separate bowl whisk together dry ingredients

slowly add dry ingredients and mix just until no dry remains

fold in chocolate chips

refrigerate mix for 15 minutes

 Scoop or spoon out , 2" apart on parchment lined baking sheet.

Bake for 12-15 minutes

Cool for 5 minutes.

Pizza Dough!!

This one I decided to try after seeing a post about someone being upset from missing out on pizza.

I use my Voodoo GF Provisions 1:1 Gluten Free Flour Blend.

You will need: pizza pan (baking sheet will work as well), instant yeast, psyllium husk powder, olive oil, water, pizza sauce of your choice, cheese of your choice and whatever topping you'd like.

Make this dough up to 4 days ahead, You might be able to freeze whatever you don't use right away as this recipe makes 3 12" pizzas.

Ingredients:

 

  • 22.5 ounces Voodoo GF Provisions 1:1 Gluten Free Flour Blend

  • 2 tsp psyllium husk powder
  • 15 grams sugar 

  • 10 grams  kosher salt

  • 10 grams instant yeast

  • 3 tbsp extra virgin olive oil 

  • 1 3/4 C lukewarm water, separated

 

In a mixing bowl combine flour, salt, sugar and yeast. 

In separate bowl mix psyllium husk and 1/4 C warm water and let hydrate for 2-3 minutes

Mix together remaining 1 1/2 C water, olive oil and psyllium gel 

Add liquid mix to dry ingredients and blend until a smooth dough forms, you can mix it all in a food processor, mixing for 25-30 seconds

Divide dough into 3 equal pieces

Place each dough "ball" into zip lock bags and place in refrigerator for minimum 24 hours (or freeze if not using within 5 days

When Ready to use:

Preheat oven to 475 degrees 

Take dough from zip lock bag and place on parchment paper lined pizza pan or baking sheet. Lightly oil hands and knead dough just to bring it together. Press out on parchment to make a round shape. Use a rolling pin to make crust thinner. Crimp/pinch edges to form the outer crust.

Top with sauce, cheese and toppings. 

Place in oven for 12 minutes. After 12 minutes take pizza off pan and leave on parchment in the oven for an additional 2 minutes.

Remove from oven, Cut. Eat, Enjoy!
